 Sausage & Egg Breakfast Bowls (a meal-prep recipe)

My husband LOVES the Jimmy Dean breakfast bowls, but it pains me to spend the money on these. Why? Because I can make them for pennies on the dollar, the ingredients are very simple (and customizable!) and I can make less waste by using Tupperware for storage. So when his Costco box of breakfast bowls ran out this week, I went to the store and picked up the ingredients to make them from scratch instead!

Here is what you will need to make 12 breakfast bowls:

  • 1lb potatoes (I used russet, but feel free to use whatever you have on hand)
  • 1.5 lbs ground breakfast sausage
  • 12 eggs
  • 1 tbsp salt
  • 1 tbsp black pepper
  • 1 tbsp garlic powder
  • 1 tsp chili powder
  • 4 tablespoons olive oil
  • 1 cup shredded cheese (use whatever kind of cheese you have on hand)
    • Optional ingredients: bell pepper, onion, mushroom, alternate seasonings

Ingredients

Potatoes

  1. Preheat your oven to 400 degrees. While your oven is heating up, dice your potatoes into very small bite-size pieces. I cut mine into about 1cm cubes.
  2. Throw your potatoes into a bowl and add the oil and all the seasonings. (At this point, you would also cut any additional veggies you want to be added to your breakfast bowl.) Throw these into your bowl of potatoes, oil, and seasonings.
  3. Fold the oil and seasonings into your potatoes so that all the little bites are evenly coated.
  4. Dump the oiled/seasoned potatoes onto a baking sheet that is lined with parchment paper and put them in your oven for about 30 minutes, stirring them halfway through. 

Sausage

  1. While your potatoes cook, throw your sausage into a pan and cook that up on the stovetop. Once fully cooked, put the cooked sausage onto a plate or bowl lined with a paper towel to absorb the grease.

Eggs

  1. Crack your dozen eggs into a bowl (I used the same bowl from my potatoes to avoid dirtying another dish!) and beat your eggs until they are fluffy. You can additionally season your eggs at this point with salt and pepper to your liking.
  2. Now, dump your eggs into the same pan you used to cook your sausage. (The fat left over from cooking your sausage is the perfect way to grease your pan and adds an extra punch of flavor!)
  3. Stir your eggs in the pan using a spatula, over medium heat. Stir them constantly so that they cook into small curd size bites. Once cooked, dump the eggs into a bowl. (Be careful to not overcook your eggs, as they will be microwaved when you eat your breakfast bowls later on.)

Assembly

Now is the fun part! To put it all together.

You should have three bowls of your cooked elements now: potatoes, sausage, and eggs. Lay your twelve containers out on the counter and give each container about a quarter-third of a cup of each of the three ingredients. Do your best to evenly distribute the ingredients, layering potatoes, sausage then eggs. Top each of the containers with a sprinkle of shredded cheese.

That’s it! Now you have 12 bowls ready to go for the morning!  

My frugalness had to know the savings that this recipe provided. Costco sells an 8 pack of Jimmy Dean breakfast bowls for $14.99. I used $7.50 of ingredients and was able to make 12 bowls. This means that my bowls cost only $0.63/bowl vs. $1.83/bowl if I had purchased them.

Throw your breakfast bowls in the fridge for up to 4 days or freeze them for up to a month. From frozen, depending on your microwave, it will take about 2 minutes to heat up (stirring halfway through). From non-frozen, heat for 1 minute.  

These bowls are easy and fun to make! And morning is that much better when your breakfast has already been prepared. Go get to crackin’!
